Hello again, Dear Readers:

It’s been a month, and I apologize. I’ve got several things to tell you, but I’ll have to limit that in this blog.

Finally, fall has arrived, and the temperatures have gone below 100 degrees every day. So far, our highs have been in the mid-80s, but we’ve had some chillier weather than that. It doesn’t last too long, but it’s enough to make us turn the heater at night sometimes.

Following last month’s trip to Trader Joe’s, one of my copywriting clients’ project managers BN told me that she was able to get some of Trader Joe’s coveted pumpkin spice body butter. She lives in coastal Florida, and apparently near a Trader Joe’s that’s not near LSU or other place with college students. I am so jealous! Well, OK, just a little jealous. I am enjoying the body scrub, though.

Much has happened since my last post.

Come and Knock On Our Door. . . .

By now, you’ve heard the sad news that Suzanne Somers has passed away from an aggressive form of breast cancer. She was an actress, author, gourmet cook, health advocate, entrepreneur, and businesswoman. I was a huge fan, and I still am, but did not know the lady personally. Long-time readers know that I have and love all her cookbooks, along with several of her other books. I know there are a few of her books that I don’t have, but I should probably get and read. We don’t have Half Price Books here, so I can’t get them cheap anymore.

She passed one day before her 77th birthday, holding her husband’s hand. Her family was at the house to celebrate her birthday with her. They had a beautiful heart-shaped purple cake made for her with lots of white piping.

Her husband and business partner of more than 50 years, Alan Hamel, and her son, Bruce, along with family members, lit candles and blew them out in a short video posted to Instagram on her birthday (Monday October 16th. ) Just prior to the birthday cake video, Alan and Bruce did a 14-minute interview with Entertainment Tonight about her passing, her legacy, her love of cake, and how they will move forward and keep her legacy going. If you have a few minutes, give it a watch.

The Legacy

Many people only know Suzanne Somers as an actress, primarily as Chrissy Snow from Three’s Company. The show is still in reruns, and there is currently a channel on streaming service Pluto TV that runs the show 24/7. I’ve watched a few of them this week. If you’re interested, you don’t have to register, you can start watching either live TV or on-demand on your smartphone, tablet, laptop, desktop, smart TV, or Roku. (You may be able to watch it on an Amazon Fire Stick, but I don’t know.)

Note: Pluto has plenty of classic TV shows to watch, including a channel of The Tonight Show With Johnny Carson. Hint: He’s still funny, especially if you remember the events he’s talking about in his monologue. I haven’t seen one yet where Suzanne Somers is on, but there are three on YouTube, plus a number of more recent clips.

Of course, there were more acting roles later, plus stints in Las Vegas, a Broadway show called The Blonde in the Thunderbird, and most recently, a stint on Dancing With The Stars in 2015. Never mind that she was a headliner in Las Vegas, danced and sang on TV and in USO shows, not to mention the legions of her longtime fans like me who repeat-dial voted for her on the show. She was voted off rather quickly, which I thought was, well, not nice. But her performances are all on YouTube, and her partner on the show, Tony Dovolani, also spoke with ET after she passed.

The Business of Suzanne Somers

Beyond her acting, She was also an author of 27 books, many of them best sellers. The last one I have was her book called Two’s Company, on her 50-plus year long relationship with her husband, Canadian talk show host Alan Hamel. She discusses a wide range of topics related to their relationship, including the business side of being “Suzanne Somers.” It’s truly a family business with nearly everyone involved in some fashion.

Over the years Suzanne sold a wide range of products on her website besides the obvious. For several years she had some lovely violet serving dishes named after her granddaughter Violet. She had small kitchen appliances, including a bread maker, a hand mixer (I still have mine and it works great), an ice cream maker, a small countertop convection rotisserie oven, a stovetop pressure cooker (this was before the Instant Pot) a deep fryer, an ice shaver, and several other things I can’t remember now. They are well-made, of course, but they still remind me of Suzy Homemaker appliances.

The books, the famous (or infamous) Thighmaster (yes, I have one), the 3Way Poncho (I have a few, and they are still available from some vendors as well as resellers eBay and Mercari) and a wide range of food, supplements and other products on her own website, SuzanneSomers.com. Her products aren’t cheap, but they aren’t rubbish, either. I was a big fan of SomerSweet, but as I wrote about several years ago, that’s gone now, and Swerve can be used in its place.

I’ll be making my birthday cake from Suzanne’s Desserts book this week. Instead of SomerSweet, of course, I’ll be using Swerve. And we’ll have a slice to celebrate the lady who did it all with grace, right up to the end.

The Zucchini

So, last week, BF came home with a bag full of great big zucchini and two crookneck squash, and said, “T says hi.” That’s one of his car guy friends, and apparently knew I would appreciate them. Because BF doesn’t eat anything called squash, including zucchini, spaghetti, or acorn, my favorites, and will let me know about it immediately.

I can only wish I had such an abundance of zucchini that I had to give it away. But I’m happy to accept the wonderful gift of excess from those fortunate enough to have such a nice garden surplus. One of these days, I keep telling BF, we’re going to have a fantastic garden from which we enjoy a great harvest.

Here’s how it ties into the late Suzanne Somers.

Zucchini Ribbons

My first thought was to make some zucchini noodles from Suzanne Somers’ Fast & Easy book (the purple one.) I haven’t made that in a very long time, and it’s simple. Cut the ends off the zucchini, then use a vegetable peeler to make long, thin ribbons. When you get too far in to keep using the peeler, just thinly slice the remainder with a sharp knife on a cutting board until you’re done. Cook in a skillet with a little olive oil, salt and pepper until they’re just done. Delicious.

You can cook as many zucchinis this way as you like at once. Eat them as is, or add them to any kind of pasta sauce you like. Fast & Easy was published before the veggie noodle makers became popular, and in a later book she uses zucchini “noodles” made from her own Su-Chef appliance. It wasn’t available for long, apparently, and it isn’t even available on eBay or Mercari, but I did find a picture.

I Thought About Her

As I took the book off the shelf, I wondered how Suzanne was doing. I remembered that she’d been ill again, but I was sure she would be getting better. Is she writing a new book? There probably won’t be any more cookbooks, I thought, but an important topic, for sure. But I knew it would be an interesting subject, well-researched and well-written, like Tox-Sick. Admittedly, I didn’t get her last book but will source it for my shelves soon.

The next day, BF sent me a message on Facebook Messenger that she’d passed away, one day before her 77th birthday. The breast cancer she’d been fighting for more than 20 years finally overtook her.

The next night, I made a Cappuccino Chocolate Chunk Cheesecake from Get Skinny on Fabulous Food, page 246.

For breakfast one day last week, I made some of Alan’s Fried Eggs In Onion Nests on page 115 for us to enjoy with breakfast. Hint: open the windows and turn on your exhaust fan before you get started cooking the onions.

I also want to purchase Served By Caroline Somers, Suzanne’s daughter-in-law, chief chef, and right-hand-gal in the business for thirty-plus years. Her stepdaughter, Leslie Hamel, is a fashion designer who designed the 3Way Poncho, as well as hundreds of Suzanne’s red-carpet items and many pieces of her clothing lines. I own a few 3Way Ponchos and made some from a Simplicity pattern published shortly after the released. There’s some fabric in my stash that will be perfect to make a couple more.

The Rest: Zucchini Sotolio

I only cooked that one zucchini on Saturday night, because I had a plan for the rest of them. I’ve done this before, but just never quite got around to posting the recipe. This recipe is *not* from Suzanne Somers, but from TV chef Giada de Laurentiis. It’s on page 226 of Giada’s Italy: My Recipes For La Dolce Vita, called Zucchini Sotolio. It’s not difficult, and it’s a great way to make those garden extras last a bit longer.

First, you cut the zucchini into 1/3” rounds. Drop them in the colander, sprinkle salt over them, and let them sit for ten minutes.

There were a couple of yellow zucchini in the bag.

But because I was sitting with BF, it ended up more like 30 minutes. But the salt seasons them nicely.

While that’s going on, boil up 1½ cups of water and 1½ cups of apple cider vinegar in a big pot.

Now, open up a window, (or turn on the exhaust fan) because it’s going to smell in your kitchen and your house if you don’t. Trust me on this, I speak from experience here. Especially with someone around like BF who can’t stand the smell of vinegar at all.

Add in your sliced zucchini and turn the heat down to a simmer:

Yes, there were some yellow ones, and they tasted the same.

Cook the slices for about five minutes, until they’re cooked but not mushy and overdone.

If you have as much as I was given, you’ll need to cook them in batches.

Then take them out:

And put them into a bowl.

You may find they’re still kind of watery, so you might want to drain that off too. Add in the mint leaves, basil leaves, chopped garlic:

And a tablespoon more of apple cider vinegar:

Toss the zucchini to mix in the rest of the ingredients. Leave them to cool for a little while.

And here comes the fun part: cover them with olive oil:

The recipe calls for extra-virgin olive oil, but I didn’t have enough. So, I just used regular olive oil.

When you have enough oil, pack them in jars or just store them in the fridge in a tightly sealed container:

This is a container I like to use for the freezer, with a rubber gasket in the lid and snapping closure tabs.

This delicious recipe will stay in your fridge for about three weeks. Serve them at room temperature. Giada says that having a jar or two of this around means you’ll always have a “quick side.” It’s also good as a starter or part of an antipasto spread. Got eggplant? It works here too, just grill the eggplant first. (No, I still hate eggplant.)

Course Appetizer, Condiment, Side Dish
Cuisine Italian
Servings 5 cups

Ingredients
  

  • pounds zucchini sliced into ⅓ inch rounds (about 3 small zucchini)
  • tsp kosher salt
  • cups apple cider vinegar plus one tablespoon for the end
  • 10 fresh mint leaves
  • 10 fresh basil leaves
  • 2 garlic cloves, smashed and peeled
  • ½ tsp crushed red pepper flakes (Amy's note: optional)
  • 2 to 3 cups extra-virgin olive oil (Amy's note: I used regular this time)

Instructions
 

  • Place the sliced zucchini in a colander that is set over a bowl. Sprinkle with the salt and toss well to combine. Allow the zucchini to sit for 10 minutes.
  • Meanwhile, in a medium saucepan, combine 1½ cups of water with 1½ cups of apple cider vinegar and bring to a boil over high heat. Add the salted zucchini to the pot and return the mixture to a boil. Reduce the heat to maintain a simmer and cook for 4 to 5 minutes, or until the zucchini is cooked through but still has a little texture. Drain the zucchini and place it in a large bowl.
  • Add the remaining 1 tablespoon vinegar, the mint, basil, garlic and red pepper flakes to the zucchini, and toss well. Add enough olive oil to cover the zucchini and allow the mixture to cool to room temperature. Pack the zucchini in jars or a storage container with a tight-fitting lid, making sure the zucchini is fully covered with the oil. Store in the refrigerator for up to 3 weeks. Serve at room temperature.

Yes, it’s still 2020. I’m sorry, nothing I’ve tried can fix that.

No, we haven’t tried the Apple Jack Daniels. But it’s not yet 2021, is it?

Got a couple of things to tell you about. And, it was my birthday!

The Birthday Cake, Again

So nearly every year since 2002 or 2003, I’ve made this delicious cake from Suzanne Somers’ Desserts book. Of course, I have to fiddle with it, because there is no more Somersweet and I have to use Swerve Sweetener instead.

This year’s cake came out better than last year’s, the second time I made the cake part. I only make it once a year, so I don’t practice a lot. The buttercream and the ganache are pretty standard, but the cake is a bit fussy.

The only ingredients are:

  • Eggs
  • Chocolate
  • Butter
  • Baking Soda (just a pinch)
  • Cream
  • Vanilla Extract
  • Swerve

They triple in volume here.

And bake.

That’s pretty much it–no “gluten-free” ingredients, and yet it is truly gluten-free. Of course, once I was done, there was some cleaning to do.

BF decided he’d rather have the brownies I made him from scratch a week or so ago, and they are definitely not gluten-free. He was also given some of these:

I cut my cake up into 16 slices, so I’ll have it for a while.

I stopped making the delicious cheesecake when I was ill recently. Just like that, I stopped making it. I’ll make it again soon.

Also made it to Starbucks for my free drink: a Venti Iced Decaf Cafe Americano with a heavy splash of cream and some sugar-free Vanilla syrup.

Last year, a storm passed through, and JC Penney was closed after a massive power outage, so I never got my gift. Turns out you can go anytime during the month of your birthday. I’ll remember that.

All in all, it was a nice day, but no cold front this year.

Farewell, Sweet Tomatoes

You’ve probably heard that one of my favorite places in Houston, Sweet Tomatoes, has closed all their locations nationwide. They were also called “Souplantation” in some parts of the US. It’s just one of the many side effects of the “pandemic” that has cost billions in lost. . .everything.

On a side note, gourmet kitchen stuff store Sur la Table has closed up about half of their stores, which includes the one in Baton Rouge. It was part of a “restructuring” thing, but of course, I can always order online. Pier 1 Imports is now online-only, like Wayfair and Overstock.

I’ve written about Sweet Tomatoes before, and I just loved all the variety of things they had.

Their website has been taken down, and all the buildings are now just empty. Their pantries and perishable ingredients were cleared out months ago. I hope the workers were able to take home everything instead of throwing them away.

I loved going there when I was in The Woodlands, especially before or after visiting Dr. Davis at Woodlands Wellness or when I was attending a concert. Wish I could have taken BF there–he would have enjoyed it, consuming less salad and more of the “other stuff.”  I love salad, so it was just the best place for me.

Last week we had dinner at the local La Carretta with BF’s family, and I mentioned it to his sister. I asked, “If I say, ‘Joan’s Broccoli Madness,’ do you know what I’m talking about?” Indeed she did–BF’s sister and brother-in-law went to Sweet Tomatoes many times in Atlanta and were also sad to see it go.

We tried explaining it to BF, but he just didn’t get it. He went on to tell his sister that I was still trying to do him in by making him eat quinoa.

It was, if I remember correctly, about $15 for the all-you-can-eat nature of the place. Of course, my thing was THE SALAD.

Joan’s Broccoli Madness

If you never had the pleasure of going, I’ll give you a visual.

When you walked in, a very long salad bar greeted you, with some specialty salads like Joan’s Broccoli Madness at the front.

As I mentioned in my previous post (without pictures, unfortunately) I never forgot the salad with cherries in it. It was one of the most memorable visits, all by myself, before a concert.

After the prepared salads, there were fresh greens, other vegetables like tomatoes and cucumbers, proteins like egg and chicken, then salad dressings followed by toppings of all kinds. You could choose from cheeses, bacon bits, dressings, nuts (ranch dressing with sunflower seeds are still my favorites) raisins, dried cranberries, chow mein noodles, and other crunchy things. I loved it all.

Get to a table, put down your salad, and go over to the prepared food area where you could choose from:

  • Soup Bar (including a turkey chili I loved)

Louisiana’s Answer:  The Salad Station

OK, I’m not going to lie–The Salad Station isn’t exactly like Sweet Tomatoes, they don’t have a carpeted dining area, nor do they serve Joan’s Broccoli Madness, and that’s OK. But when my birthday was looming this year, I asked BF where he was taking me. “I don’t know yet” was his answer.

I have long wanted to try The Salad Station–especially since there’s no chance of ever going to Sweet Tomatoes ever again. Every time I brought it up, he said, “but there’s nothing for me to eat.” He was wrong, of course, and had bacon and ham on his salad, while I chose boiled shrimp. Because I don’t have to mess with them.

We’re not talking about flying to Beverly Hills–or even Houston–for an exclusive restaurant. It’s just a ride to Hammond, although we could have gone to Denham Springs, Baton Rouge, or any other location. I talked BF into it, and he said, “whatever makes you happy.” Awww.

Salad Station does have many of the same qualities as Sweet Tomatoes, but they are smaller. Like Central Market and a few other places, you buy your salad by weight–it’s not “all you can eat for one price.” That’s OK too. However, BF was surprised when my salad was weighed–it was twice the size of his. But as you can see, BF has a markedly different definition of “salad.”

Their salad bar is wide open as it was before, and they require you to wear your mask while you’re there. (Everyone in Louisiana does.) They also have thin plastic gloves you’re required to wear while choosing ingredients. Not a problem, and we took them off when we sat down to eat.

Yes, this does segway into the main topic of the blog post.

Intermittent Fasting

You’re probably thinking, “get to the point of the blog, will you?” I am.

I’ve been doing Intermittent Fasting for a few weeks now. I started right before my “breathing emergency” last month but had to quit while I was on Prednisone. A couple of days after I took the last pill, I went back to IF, and have been doing fine since.

Amy’s Disclaimer: I’m not a doctor, nurse, scientist, or other type of healthcare practitioner. I’m a blogger who writes about different topics, occasionally diet, health, and wellness. I’m by no means an expert on these things. Should you choose to pursue IF or any other thing I’ve written about, please do some additional research before you start, or speak with a health care provider who can guide you.

How To Eat On IF

Intermittent Fasting isn’t really a “diet,” and doesn’t require any special foods, supplements, shakes, or other financial outlays.  You can find plenty of info online, particularly on Pinterest. Like any subject, there is “good” information and “bad” information, equally accessible. (I’m a copywriter, ask me, I know!)

Fasting has its roots in many religions, including Hinduism, Judaism and Islam. (That “fish on Friday” thing is Catholicism, but I think that’s been made optional.) There is “wet fasting,” where you drink water and maybe a few liquids as well as “dry fasting,” where you consume nothing, including water. If you decide to do any kind of fasting, I highly recommend doing some reading first, either from the library or from online searching. Just don’t assume you can stop eating and drinking and figure you’ll detox and lose every excess pound you have. NO–hydration is important, the body needs water for its many processes. I’m not a fan of “dry fasting,” and do not recommend it.

Intermittent Fasting’s basic premise is that you “wet fast” for a specific window of time during your day, generally overnight, or whenever you get to bed. Easy, right? Then you enjoy food during your “eating window,” which is also a specific period of time.

What period of time is that? YOU figure that out for yourself. If you work evening or night shifts, then, of course, your eating window will be when you’re awake, and the fasting window is when you’re asleep.

Easy, right? Well, there’s a little more to it than that.

Getting Started With IF

I got started when cookbook guru Stephanie O’Dea published her new e-book, 2,4,6, Eat: Intermittent Fasting Simplified. I have read this one.

The first three books were gifted from Callisto, some of the last physical copies before they went digital. Stephanie, on the other hand, wrote four e-books during the lockdown, this being one of them. When they were published, she mentioned them in her regular weekly emails, and they were 99 cents each at that point. I bought all four. Her book on IF is the one I read first–in less than an hour if I remember correctly. Much like her cookbooks, Stephanie lays it out as if you were sitting with her in Starbucks and talking about it.

You can do IF with your CrockPot, too.

So how did Stephanie do with it? In a nutshell, she’s lost the last few pounds she was trying to shed, and she looks great. I mean, she already looked great, but now she looks even better.

I also joined a Facebook group called Intermittent Fasting For Women, which is not affiliated with Stephanie’s own Facebook group (I’m also in that, link in her blog.) There are over 360,000 members around the world focused on one thing: fasting intermittently to lose weight that won’t come off any other way. Very encouraging, and if you ask a question in this big group, you’ll get many different answers to it.

Many of these women show pictures of their results, but I’m not posting any pictures in my underwear on Facebook. Some have small amounts of losses, but they’re visible–all depends on how they’re doing IF, how long, and how much exercise they get. Some show considerable results, like the ladies who are quite large and have shrunk down to a tiny size 6 (or less.) Many become absolute bombshells after losing weight. In fact, sometimes when I see these pictures, I comment, “bombshell alert!” One lady who posted is about 63, and she looks fantastic. Another lady who is 72 is no longer using her “Bumblebee” chair to get around (although she is using a cane.)

I’m not there yet.

What To Eat On Intermittent Fasting

Well, that’s the $64K question, isn’t it?

Of course, it’s best to eat as healthy as you can. Many people find that keto is a good thing for them, and as I always say that I eat “keto, mostly,” since BF likes to make jambalaya or red beans and rice occasionally. But some folks may decide to eat paleo, low-carb, or simply eat what they’ve always eaten, just changing the times of day they eat.

Then there are those who eat the same foods that they ate before but at different times and maybe different amounts. They lose too. They may eat a few Oreos or a candy bar along with salads and grilled chicken during their eating window, but ONLY during the eating window, and maybe decrease the amounts, or increase your fasting window during a “treat day.”

Everyone has an idea and offers advice. But the most prevalent thing I’ve seen is, “You do you, and what works for you.” If having a little sugar-laden French vanilla coffee creamer isn’t stopping your weight loss, go for it, in moderation.

Drinking water is encouraged since you need it. Not the excessive soft drinks BF chugs down on a daily basis. In my case, I’m still drinking the lime water all the time, along with coffee, occasionally tea, with pink sweetener and cream in the last two.

Here’s the thing: there aren’t any “special foods” you need to eat on IF. Do you like keto, paleo, or low carb? Go for it. Want more gluten-free, dairy-free, or sugar-free foods? That can work, too. You can count calories–but I don’t, and neither do a number of other IF devotees. And if it doesn’t, try something else, add exercise, increase your fasting window, or whatever you want to, and wait for the results.

Unlike the popularly advertised diet plans on TV, you don’t need to buy any brand, type, or style of food. It’s great that so many celebrities have lost weight with the diet plan thing, but that’s not what IF is about.

The key is: You do you.

My Current IF Results

I’ll be perfectly honest here–I haven’t dropped what feels like 915 pounds in a matter of days. That’s not happening any more than riding my bike for 30 minutes once and being in top shape for the Texas MS 150 tomorrow. I did the hCG diet for about a year and a half–I lost weight, but even the hCG diet doesn’t work like that either. But in my case, my current results are:

    • The scale hasn’t yet gone down, but remember–there’s water weight, and “weight” fluctuates anyway,  particularly in women. I don’t get on the scale often because it can be discouraging.
    • I’ve noticed some “shrinkage” here and there, but I’ve not yet gone down to smaller clothes yet.
    • Although I did fill up the bowl at The Salad Station just like I did at Sweet Tomatoes, I didn’t finish it like I used to. I credit that to Intermittent Fasting. I took about half of it home for the next day, then had a sliver of cake when we got home an hour later, then my “fasting window” began.

My current exercise consists of the occasional walking tours of Walmart, along with regular use of the Thighmaster set, and slinging around a kettlebell weight, the latest of which is 20 pounds. I’m trying to get to the point where I can get a half-hour of yoga, HIIT (“High-Intensity Interval Training“), or bicycling in place in my day.

While in Academy after dinner, I did check out the availability of heavier kettlebells. (They seem to be difficult to find in some places.) Right now I’m lifting a 20-pound (padded) Bionic Ball kettlebell, but I want to eventually lift more. I told BF that if I start swinging around a 40-pound kettlebell like a roll of paper towels, he’d better be on guard.

Nah–I’m not going to swing it at him. I just like poking him in the ribs now and again. Trust me, it works both ways.

Honestly, IF is not terribly difficult once you get into a rhythm. You just have to remember not to have a nibble of something before bed, or you’ll break the fast and it won’t work. And Stephanie’s book is HIGHLY recommended. It’s not a long or difficult read and is very informative.

And The Cat

I loved my felines, Catmandu and Kismet, who have long been gone for many years. Our current apex predator, Tab E. Cat, is all about BF, and couldn’t care less what else is going on as long as he can curl up with him. He only likes me when I have food.

Until one day.

I did try to do IF while on Prednisone, but it wasn’t happening, so I quit for the duration of the medicine. One of the drug’s side effects is that you can become very hungry.  I did, and just didn’t bother with IF for a couple of weeks, but sticking closely with keto as much as I could.

One night, about 11:00 pm, my stomach was letting me know it wanted something–fast. I went into the fridge and found some sliced roast beef that BF was using for sandwiches. (Notice I said “was.”)

Taking out a couple of slices, I went to talk to BF, who was now curled up in bed with the cat. The beast was nestled under his left armpit. Upon seeing and smelling the roast beef slices, Tab E. Cat looked up at me, opened his eyes, walked OVER BF’s chest, and up to me, completely ignoring him. He meowed, giving me that wide-eyed cat look that said, “oh, that looks delicious, I’d love to have some!” I gave him a small bit to avoid getting clawed. BF was shocked, and said, “great, now I’m chopped liver.”

Only when there’s food involved, Honey.

Are you ready to Swerve?

Hi, again, Dear Readers–let’s Swerve!

I’m sorry to be late again, *life* has happened, and there are dogs involved. We’re getting that sorted out, and I’m always looking for new things to bring you.

As I alluded to in a recent post, there is something available for folks who miss SomerSweet, and anyone who’s looking for a sweet alternative to sugar that isn’t toxic or make you feel ill after eating it. An alternative sweetener that allows you to sweeten foods naturally without wondering what will happen in an hour. And one that’s somewhat accessible without ordering it from somewhere else. I found it: and it’s called Swerve.

I still miss my HEB.

Now, y’all keep hearing me say this. I really do, and here’s one of the main reasons:

That’s right, I’m really ticked off about this. HEB, Kroger, Randall’s, and other stores in Houston (and around the country)  have cup holders for your coffee. Many stores, like Kroger, Randall’s, and Target, have Starbucks locations in the store. (The Walmart on I-45 has a McDonald’s in the front of the store as well.) I mean, coffee is a thing now, right? People shop with their coffee, especially during the cold winter months, so why not?

See? They all have them!

When I went to Winn-Dixie a couple of days before Thanksgiving, I stopped in at the PJ’s in front of the store for a coffee. Once I grabbed my basket, I realized–no place for coffee! I had to be very careful balancing a coffee in one hand, or balancing it in the “seat” part of the basket. It’s 2016—child seating areas have been in grocery store baskets since I was a kid—so why don’t they have coffee cup holders in the rest of the US?

NOW do you see why I miss my HEB? (And many thanks to Neighbor E for the great pictures, too!) Well, I’m getting there. And, BF makes it easier. He’s been to our HEB, so he understands why.

Turkey thighs found!

I did find more turkey thighs at the Rouse’s on Veterans Memorial Boulevard, and I bought both packs—they were under $2! Next trip to NOLA, I’ll go look again. The newest Trader Joe’s is across the street; I just went there for a couple of bottles of water for the trip home (and I know they’re 17 cents each.)  But it’s nice, just like the one in Baton Rouge, and the one in The Woodlands. If you haven’t been to a Trader Joe’s, and there’s one in your area, might be worth a visit. I very nearly brought home a packet of their Pork and Beef Tamales. They actually are a product of Mexico. They’re real tamales, and very tasty too.

Do *you* have a coffee while you shop?

I did notice that my Whole Foods in Mandeville has coffee cup holders in their baskets—the little “urban” baskets, as I call the smaller ones with two compartments, have them in the handle like HEB does. The bigger baskets, the ones with the child seats in them, have these plastic holders, which also hold things like flowers:

This will hold coffee or a bunch of flowers.

I know, I know. . .these are “first world problems.” But DARNIT! When there’s a PJ’s right in front of the store, why can’t Winn-Dixie shoppers have holders for coffee too?

What’s this foolishness?

Speaking of Whole Foods, I saw this little gem last time:

Not Beef? Not interested!

No kidding, “Not Beef.” OK, riddle me this, Batman—if you’re truly a vegan and/or vegetarian, and you do not partake of a product that comes from “anything with a face,” why are you in need of a product that tastes of simulated beef? Is this to go with your “plant-based burger meat?” Not a joke, and it’s $3 a box!

Yuck.

No, OK? And that recipe for “Not Beef Noodle Soup” starring cut bits of tofu? Yeah. . .not happening in the Casa. Even if I weren’t allergic to soy, I wouldn’t try it. What’s the point? Besides, BF would run me up the street for bringing tofu into his house.

I know, I know–Whole Foods is giving customers what they want, or what they think they want. This is America, the land of invention, so. . .spend your money where you like, but I still think it’s silly.

Resistance is futile

Oh, and, despite my refusal to do so, I now have a Winn Dixie Customer Reward Card, similar to the ones I have for Kroger, Randall’s, Vitamin Shoppe, Petsmart, Petco, IKEA, and a myriad of other stores in Houston and elsewhere.  I added the app to my phone, too. Lucky me, they have “fuel points” that we can use to save a few rubles when we fill up The White Knight. So I hope to be able to use the points soon. I spoke to Winn-Dixie today to resolve an issue with duplicate cards.

While I on the phone with the nice lady, I expressed my discontent with having no place to put my coffee cup while shopping. (The PJ’s is right there, for heaven’s sake!) She didn’t know why that was, but she promised to pass along the suggestion to management. So maybe during the next upgrade of baskets, Winn-Dixie will get with the 21st Century and have a place for customers to put their coffee cups while shopping there.

Let’s do the Swerve!

If you’re one of those folks who is missing SomerSweet, isn’t happy with stevia, or would like to move away from the Splenda, Equal or other chemical sweeteners you’ve become accustomed to using, Swerve might be what you’re looking for.

 

As I mentioned in my last post, I found Swerve in the Mandeville Whole Foods on my first trip. Swerve is erythritol, a natural sweetener that doesn’t have any nasty side effects like chemical sweeteners, and no, um, gastro issues. This is great news for diabetics and anyone who wants to cut down or eliminate sugar from their diet. You can have some sweet stuff and not be tempted by something you know you shouldn’t be eating. It’s especially useful this time of year when you know how all the well-laid plans go pear-shaped when someone shows up with anything called “Black Forest,” “Chocolate Cherry,” “Peppermint,” or the thing that makes me knock a big guy out of the way. That would be nearly anything with chocolate and raspberry in the same place.

BF knows to move if I spot that combo, but I haven’t been in the company of the esteemed Shaquille O’Neal; I’m sure he’d move out of the way just as fast.

Not everybody cares

Please note that in my own experience with healthier foods, not everyone cares that it’s sugar-free, gluten-free, carb-free, or yeast-free. This was especially true at Thanksgiving when my favorite Cranberry Ginger Relish wasn’t well-received. The vegan cornbread made for BF’s Dad wasn’t well-received, either. I’m not doing that again, I’ll make all that stuff for myself. BF “kind of” liked the vegan cornbread, but the “regular” cornbread wasn’t all eaten, either—about half went to Hound Training.

Another example: A few years ago, I brought former Neighbor R a pan of yeast-free brownies at her request (she’d given me a big favor.) She thought that little pan was “too much,” and she gave half to another neighbor. That other neighbor, I was told later, brought them to her booth at a flea market, where “everybody loved them!” No kidding—that neighbor didn’t know they were more expensive, sugar-free and all that, because she was accustomed to making brownies from a box. I’ve said this before: alternative ingredients are pricier than the usual white-flour/white-sugar stuff. So unless you know someone who would appreciate yeast-free brownies, gluten-free cornbread, or other non-standard healthier recipes, it’s probably better to keep them to yourself, or at least in your family’s kitchen.

Swerve is all good

Granular Erythritol is available in a number of places, including Amazon and Dr. Hotze’s in-house vitamin store (called Sweet-N-Natural.) This 2-pound can is $50; SomerSweet was considerably less expensive. But if you don’t have the inclination to pop for that much Sweet-N-Natural, Swerve is a great option to try erythritol. A 12-ounce bag was $7.99 at Whole Foods, and you may find it on sale occasionally for less.

So what do you do with it? Use it like sugar. Between the Swerve website and their Facebook page, you’ll find lots of ideas for using Swerve to satisfy your sweet tooth. They don’t yet have a downloadable PDF file of recipes; you just go there, or to their Facebook page, and pick out what you’d like. I’ve seen some tasty desserts on their site, but I haven’t tried them yet. This one, for Pecan Pie Biscotti, looks pretty tasty.  (Access all their recipes here.)

I had a chat with the very nice Natalia at Swerve, and she says that although they’ve been around since 2001, they’ve only stepped up their marketing since 2012. Swerve is available nationwide as well as in Canada and is also available at places like Amazon, iHerb, and Vitacost if your local market doesn’t carry it. (They currently don’t have an e-commerce function on their own website.) You can also use their handy online store locator to find it in your neck of the woods. I  had no idea that it was available in Clear Lake, but it is!

Swerve comes in 12-ounce packages, in granular and powdered.

What makes Swerve special?

The cup-for-cup measure is a distinct difference between Swerve and other similar products. Swerve is the only product of its kind that comes in not only granular, like you would put in your coffee, but also powdered for confectionery creations (i.e., truffles.) No one else has a “confectioner’s sugar” version. It’s also gluten-free and non GMO (two big sell factors for me.) Erythritol doesn’t promote tooth decay the way sugar does, and of course, it TASTES LIKE SUGAR! No metallic aftertaste like stevia—I’m sorry, but stevia kind of tastes funny to me. So, I’m liking Swerve a lot.

Unlike xylitol, erythritol is also safe for the dogs who might get under your feet and nibble a bit of crumbs you didn’t know you dropped. Xylitol is very toxic for animals, so if you have some or might use it, do keep an eye out around the critters. Last thing you want is an emergency vet bill for a poisoned animal.

So what does Swerve taste like?

It tastes like sugar! No, really, it tastes like sugar. No aftertaste at all.

I tried Swerve myself recently when I made some coconut oil chocolate to nibble on. With It worked perfectly, and there was no difference between the one I made with SomerSweet and the one I made with Swerve. They were equally tasty, and melted all over my hands as coconut oil is wont to do.

Two tablespoons of cocoa powder, then mix well with a fork:

Chocolate first

Now add Swerve, just stir it in:

See? Works like sugar. Just stir it right in.

I think I added two of those tablespoons, just like SomerSweet. And because the coconut oil was unflavored, a little almond extract does wonders for the taste:

Chocolate. . .er,”candy.”

Please note that almond extract is VERY potent, and you only need a tiny drop for this.

Freeze until hard, and carefully break it into chunks to eat like candy. Well, it pretty much is, isn’t it?

I’m thinking it might be time for another crack at the YeastFreeBrownies, sweetening them with Swerve. I haven’t made them in a while. Maybe BF might even like them, just a little.

So, now you have an alternative, and if you’re like me, a replacement for the beloved SomerSweet. (Or if you’re looking to permanently ditch the toxic chemical ones.) I’ll use the rest of the SomerSweet over time, and will pick up my sugarless cooking and baking with Swerve. BF will probably not like me buying many bags of it at a time, but you know I hate to run out of anything.

The Thanksgiving Post: Apples and Spaghetti Squash

Hello, again, Dear Readers:

I hope you’re feeling better by now. The election, and all the associated nastiness, is over for a while. Now it’s time for transition, and hopefully, getting back to whatever passes for “normal.” It was a nail-biter, and for some reason, I couldn’t stop eating BF’s ice cream. (I didn’t eat all of it, just a little.) We stayed up until 3:00 am or so watching the results, and back-checking CBS News on our phones against what was showing up on Facebook in our feeds. Bizarre–I’ve never done that before, but we finally hit the sack once it was all over. Good thing we didn’t have anything planned for the next day, and he was off work. No more sugar-laden ice cream, and the weight is going back down again, thank heavens.

Time for some comfort food, OK? Keep reading, there’s a recipe for you shortly.

We’ve been doing some renovation type of cleaning in the Casa, which includes having one of his, um, ex-girlfriends finally come get her stuff out of his house. She’s got some of it, but some still resides for a few more days. (What are we, Public Storage?) His daughter took the things she wanted and I helped her clear out stuff she didn’t want. All that’s left is his friend from the Navy. Well, with moving stuff around and out, painting the back room for my soon-to-be studio office, and clearing car parts out of the house, we’ve set up a little breakfast area by the kitchen:

This is my IKEA Tarno patio set that we just put there and put a tablecloth over, and BF decided to add my tiny lamp (Lampan, also from IKEA.) I repaired the miniblinds which had been damaged by a passed-on pooch, and cleaned the window really well. Know what? It’s kind of nice to have breakfast right there, or dinner. When we get things better situated, we’ll put my regular dinette there, and I’ll repair more of the miniblinds, now that I know how. (Looked it up on eHow and learned on the fly.) The blinds are closed so you don’t see that the Casa “beautification project” has not yet carried over to the patio out front.

After my trip to New Orleans on Sunday, where I bought some lovely pork chops, chicken sausage  and chicken thighs for us, BF decided Monday to get. . .one of those “kits” to make tacos for lunch on Tuesday. I kid you not. At least he had the sense to get the crunchy taco kit, which has corn tortillas. No word about “gluten free,” but there was no wheat or its derivatives in any of the ingredients that I saw, so I was glad about that and reluctantly took part. (It does say that it was partly produced with GMO ingredients; my guess is the corn, which I rarely eat.) He asked me to brown the ground beef to get started, and of course, twenty minutes later, we had tacos–because he went into the living room to watch more TV. GRRR. . .but I got the job done.

Dinner was Mustard Pork Chops in the Crock Pot, which I may post soon. It was pretty good, and worthy of doing again. Because he really wanted. . .tacos. . .the chicken shifted to lunch on Wednesday, where I made him, for the first time, Nigella Lawson’s Pollo alla Cacciatora, or “The Hunter’s Stew,” which, in Nigella’s case, is “lazy hunter’s stew.” (It only takes 30 minutes.) Although it’s long been a comfort food favorite for me, this was his first taste of it. Thumbs up–he likes it, and I can make it again for him. (Thanks.) The next day for dinner at work, he took some with a cup of rice, since he thought it “needed” some. No problem, I cooked up a small batch of white rice for him and added it to the container. Along with a slice of made-from-scratch pound cake from his friend’s birthday, he was all set for work.

Now, if you’re interested in making this “hunter’s stew,” I want to point something out that’s not immediately obvious: although the printed recipe calls for a half-cup of pancetta cubes–which is perfectly acceptable, albeit expensive and hard to find here–you can also slice up 3 or 4 slices of bacon in place of it. That’s the way I’ve always made it since I saw the original show.  The show may be on YouTube; you’d just have to look for it.

It really is a nice comfort food. Even if it does come from across the pond. You’re welcome.

I’ve been in the larger Winn-Dixie in Hammond, and indeed they do have more organic produce. Surprise–they even have fresh sushi. I still hate sushi, but–they have it! I did some recon in the morning, and then did some shopping later in the day, mostly meat, eggs, butter, cheese, etc. I almost–ALMOST–thought I was in Kroger. And I kept saying “I live down in La Marque. . .” which, of course, is in Texas. Well, it’s probably because I felt like I was in Kroger. I sure do miss my HEB, though–the pork loin roasts I used to get on sale for $3 in HEB are something like $12 here. What’s up with that? I did find a nine-pound pork loin that was about 3 feet long, but we don’t have any place to store that monster. Another time.

Rouse’s has purchased a rival grocery store chain, so there will soon be a Rouse’s in Hammond for me to visit, right near that Winn-Dixie. That’ll be good, too.

A quick look at the calendar tells me that Thanksgiving is coming. It’s next week! I really have lost my sense of date and time. For the first time in I don’t know how many years, I won’t be cooking turkey. That’s OK, I cook turkey all year long (I just wish I could get turkey thighs here; maybe Albertson’s has them.) I asked BF the other night what our plans were for Thanksgiving; he said his brother usually does a big spread, and we would attend. (Just have to figure out what I’m going to wear.) Well, if I’m allowed, I’ll bring some of that fantastic Cranberry-Ginger Relish and maybe one or two other small things, but I warned BF that I would likely eat before I went. Longtime readers know that things like sweet potato pie, sweet potatoes with other abominable things added to it and all things bread, pie and gravy are not coming my way. I’ll be happy to have some turkey–maybe a little mashed potatoes, too–but no gravy, please! Gravy, to me, kills the taste of everything under it. So this will be interesting, and maybe I’ll pull the Nordic Track out in the morning before we go.

Think I should just stay home and watch Britcoms?

So, what do you do when you’re hosting such an occasion and have health concerns to consider? (Besides panic, that is.) Or, surprise, his new girlfriend is a vegetarian, and he’s going vegan soon too? Knowing this in advance helps, of course, but sometimes you don’t, so having some extra vegetable dishes helps (just don’t use chicken stock!) I’ve written about these kinds of things before, and you can also get some help on Martha Stewart’s website, under “All Things Thanksgiving.” Sur la Table has also published its annual Thanksgiving Guide, and it’s available online or as a free download to print. BF and I caught a bit of the Rachael Ray Show the other day, and someone named Clinton Kelly was making dishes you could make in advance: Turkey Meatballs, a Roasted Vegetable Soup (which looked pretty good, actually), which you could make in advance and freeze, then serve from the Crock Pot and some popover kinds of things with smoked salmon.  The Quinoa Pie with Butternut Squash is really good, too. Of course, if you’re looking for something specific, please check out the worlds’s biggest idea database, Pinterest.

One thing I can’t emphasize enough is getting started on your Thanksgiving planning early. Get that turkey NOW, if you haven’t already. Get your brine mix, or make it, NOW, because the turkey has to thaw first, AND you have to make the brine ahead of time. Buy your ingredients early, especially the unusual stuff, like puff pastry or something else that everyone will be looking for like fresh or dried sage. Doing potluck? Ask and assign people a specific dish–dressing, veg, cornbread, whatever–so you avoid the problem of everyone stopping at the grocery and picking up a cake or cupcakes at the last minute. All dessert and little turkey does *not* make happy dinner guests, you know? A broad variety of different vegetable dishes, and maybe including maybe a pilaf or risotto (using vegetable stock) can keep everyone happy and well-fed while including the vegetarians and not calling them out for it.

Brining a turkey? Here’s one from Ree Drummond, The Pioneer Woman (warning: it has brown sugar) and one from Martha Stewart’s website. If you want to brine a turkey–and I highly recommend it–get going. Now. Juniper berries might be hard to find soon.

It’s also a great time to dust off the slow cookers and the waffle makers if you’re not using them regularly. Make sure all your appliances work before the big day, too. And isn’t there something you can slow-cook or waffle ahead of time? (Cranberry Ginger Relish can be made a few days in advance, thank heavens.)

Yes, it’s time to get your thinking cap on. Quick. Whether you’re hosting or just attending, it’s time to take inventory so your Thanksgiving will go well and everyone, including yourself, will enjoy themselves. (Here’s some advice I wrote about last year that may help.)

Here’s another tip: READ your recipes and understand them before you shop and get started. Case in point: last night I decided to make something new for me and BF. Seems he’s never had eggs with tomatoes in his life, despite his claim of “I’ve been all around the world!” So, I found this recipe for Skillet Eggs and Tomato Sauce in one of the Everyday Food cookbooks last night, and asked him if he’d like to try it. He said he would try it, with a bit of reluctance in his voice. (Next question I asked: “Do we have any anchovies?” Oh, the look on his face was priceless.) In the book, this recipe makes two servings, not the four that’s on the website. Unfortunately, I didn’t realize that the book called for a HALF can, 28 ounces, of tomatoes. Skimming over the ingredients, I just figured I could use two cans of tomatoes, 14.5 ounces. That’s pretty much the same, all right? WRONG–it was, indeed, way too much tomato, and that was his first comment. (I ate them, though.) I noticed the difference when I put the book away–and then made a note of it. He said he’d like to have it again, with half as much tomatoes. Done. (And maybe an anchovy, too, but don’t tell BF–I hide that kind of stuff in a drawer of the fridge.)

The point: please READ carefully and understand before you do something dumb like I do sometimes. Especially for Thanksgiving. OK? Don’t forget the hot mess I made when I invited The GER over a few years ago. It can happen to you. READ. Please.

Now, would I leave you without help for Thanksgiving? Of course not.

Remember last time, when NM handed me a bunch of apples to take home? Well. . .I did put them in the Crock Pot, and darnit, they were pretty tasty! I made them at the same time as the pork chops, but not because I had pork chops. BF wasn’t wild about them cooked, he’d rather have fresh. But, it’s fall, and it feels like fall, so I wanted to try something different.

I actually made two batches, in two different slow cookers, to see what would happen with two different sweeteners–SomerSweet and Agave Syrup. I think this would make a great lower-carb/gluten-free alternative to the traditional apple pie. Either for everyone, or just for guests like me who would rather keep the calorie count down.

If you’re planning to have an apple dessert, or more than one, for Thanksgiving, this is an easy one to toss in and forget for a while. I actually made it a second time with bigger, fresh red apples so I could take pictures and show you how it’s made.

When I cruised through Pinterest to find apples in the Crock Pot, I didn’t find much in the way of healthy versions–mostly, they were loaded with sugar. GRRRR. . .but of course, we have alternatives in our world, don’t we?

Yes, that’s the same sherry vinegar I have around to make Cranberry Ginger Relish, but since I don’t use it often, and it only takes a small amount, I decided to try it in this apple dish. You could use red wine vinegar, or just leave it out if you wanted. But I found that the sherry vinegar added a nice depth of flavor that’s not often in apple dishes.

I started out by washing all the apples, of course:

The first time I made this, I used just cinnamon. I decided to use apple pie spice for this incarnation, because I’m glad I did. I made some using this recipe, but because not everything is unpacked, I couldn’t find any allspice. So, it was back to Winn-Dixie for more after I picked up BF from work Sunday afternoon. He wanted some hot chocolate because the weather had turned cold. While he was prowling around looking for that, I went to the spices. Hmmm. . .should I get the stuff called “natural,” which is a rather nebulous word on food products, or get the brand I frequently bought in Houston?

I picked up that bottle that was $1.64 and put it in the little hand basket. Then BF returned to the spice aisle and was of the impression that I’m not getting what I wanted. He then said to me, “Look! Here’s all the ‘allspice’ you could ever want, right here!”

BF was in the Navy, you know. Fortunately, he was *not* on KP in the galley (kitchen), or he would have been keel-hauled for making that mistake. He only had to put up with me laughing at him all the way home.

And use it like you would the store-bought stuff. No sugar or other additives to worry about. (Of course, yesterday, I found another carefully packed box marked “Amy Pantry,” which had not one, but two bottles of allspice. GRRR.)

Back to it–I started by putting a bit of olive oil in the bottom of the crocks:

Now, I’ll bet you’re wondering if there’s a deliberate reason for a black and white crock. Well, yes, and I used it–the black one was mine, a replacement during a Karma of Spare Parts incident, last year, I think, when I sent the 4-quart crashing to the floor on a Sunday. They no longer had white, so black it was. The white crock belongs to BF. The difference came in handy: the black one had apples cooked with Agave Syrup, and the white one had apples cooking in SomerSweet.

Neat, huh? (Worked for me!)

Then started cutting the apples and adding them to the crock, and rolling them around in the oil:

Mix it all up again to coat the apples with the rest of it:

And cooked it on low for about 4 hours.  What happened? Well. . .it was interesting, and BF gave me his honest opinion (I only had to needle him a little bit.)

Hmmm. . .looks like Miss Food Blogger forgot to take a picture of the results. Oh, well. I had three things going on at once. . .and we just ate them!

While BF would prefer eating apples raw, he said that the apples cooked with SomerSweet were a little less sweet, and still somewhat crisp, although they weren’t hard like a fresh apple. The agave syrup crock apples were softer and sweeter than the others, and that’s the one he preferred.

If I had cooked them longer they would have probably been a lot softer, and maybe even soft enough for applesauce. But peeling all them apples? No thanks. It was just something to use them up the first time.

Agave syrup works for a lot of different things, including a replacement for honey, with less of an insulin spike than honey would give. (Remember: I’m not a doctor, I just read about these things.)  SomerSweet’s primary ingredient, erythrytol, is a sugar alcohol that’s also quite sweet and works like regular sugar, also without the insulin spike.

For you and your guests who don’t want pie or other heavily-sugared dessert, baking apples in your Crock Pot may be a good alternative to have around, and in the Crock Pot, couldn’t be easier. But why wait for Thanksgiving? Apples are in season now, and available all year around–make some this week or this weekend, and see how you like it. Tweak it to make it yours, and offer it with pride on Thanksgiving Day. It’s one of those things you can set and forget.  You may be asked to make it again next year, or even before then–and what would be wrong with that?

Now for another side dish that’s also low-carb. Spaghetti Squash. Have you tried it? I have. They’re hard as a rock and can be somewhat dangerous to cut, especially the larger ones. Easiest method I knew of, until now, was to cut it in half, scrape out all the seeds and strings, coat the inside with a touch of olive oil, and roast at 350F cut side down for an hour.  I used to use the toaster oven to roast even the larger ones, but now I don’t have a toaster oven. What to do? Well. . . .

I also follow a blog called Half Baked Harvest. I found a recipe there a while back, and I may have posted it here, but I can’t find it now. HOWEVER–a few weeks ago, this recipe for Crockpot Spaghetti Squash with Lasagne Bolognese showed up and got my attention. I haven’t made the Bolognese sauce yet, but I might one day.

But cooking a spaghetti squash in the Crock Pot? Why haven’t I tried this before?

Tieghan makes up her sauce, adds it into the Crock Pot, then puts the whole, untouched spaghetti squash right on top the sauce. No kidding. So I pulled out the big one and put the (little) squash in it, because the ovals were needed for the apples.

I just pulled off the sticker, washed it off, dropped it in, turned it to low and left it alone for a good 8 or 9 hours.

You put the food in, put the lid on, plug it in, turn it on, and leave it alone:

Either use a good potholder or wait til it cools, then cut it in half to remove the seeds. Once you’ve got the “guts” out of it, scrape out the “spaghetti” with a fork into your serving bowl:

And you’ve got delicious and perfectly cooked spaghetti squash for your vegetarian guests. (You could also use olive oil if you don’t want to use butter.) But don’t be surprised if the non-veg folks dig into it–spaghetti squash is delicious when cooked well and seasoned right. (If only I could get BF to try a bite of it; he hates squash across the board.)

Summer Simmer: The Crock Pot

Hello, Dear Readers:

Well, I’m back for a bit. The copywriting training went well, and I’ve been quite busy working on my marketing materials–and getting a little brain freeze occasionally. No, Blue Bell ice cream is completely unavailable, and I don’t want any other kind. Soon the “great ice cream listeria hysteria” will be over and Blue Bell will be in stores again. No, it’s been the writing and constructing of things I’ve needed for a long time. I have a better understanding of it, but it’s a bit slow going. There will be an email to the coach/instructor soon, if for no other reason than clarification of a few things.

One idea borrowed from my copywriting website is a page for my writing samples. I realized one night that I could start a recipe section on this website, and I have. At the top of the page, you’ll see a link to recipes, (you can click on the link too)  where my favorites old and new will be available as PDF files. I even created a logo that I think I’m going to use on the recipes and maybe elsewhere on the site. I’m not a designer, so that’s a “C priority” right now. But there are currently four recipes there, one from this post, and more will be added as I can.

While the rest of the country says “spring,” the 80-degree days are here, so we’re pretty much back into running our air conditioners 24/7 except for the recent spate of cool fronts that have come through. I’ve been wearing shorts for some time now, and even with the breezes we get, it’s still warm. Neighbor K’s adorable Daft Pug isn’t interested in the long walks anymore, but he’s good about. . .well, going outside for a sunshine break.

The HeatCageKitchen garden is roaring along–I’m getting tomatoes! I now have only three Meyer lemons growing, after one dropped off during the rainstorm this morning. . Mint, pesto, onions, parsley, cilantro–they’re all getting bigger, and so is the Anaheim chili pepper plant. Oh, and I’ve re-done the ‘re-grow your lettuce” experiment; it’s working this time, but I should plant one or two more lettuce cuttings. More on the garden soon.

Neighbor J upstairs has gotten into the habit of giving me the Sunday paper when he’s done with it, mostly for the coupons. He keeps the sports section, so naturally, I’m not complaining. He’s also the neighbor who has generously given me some venison and some raw honey on occasion. I need to bake him some muffins or a cake soon, as well as a couple that live in a different building. They generously planted some free landscape things in front of our little enclave; someone else dug up the free plants. Neighbor K and I keep saying we’d get around to it, but this sudden gift happened on Good Friday.

Remember: gifts do not always come wrapped up at Christmas. Ask anyone who’s received something handmade from me, like The E Man and friend of the blog KJ, both in New Orleans, who each received a package of handmade items recently; KJ didn’t know it was coming.

Speaking of The E Man, I recently helped him find Trader Joe’s in Baton Rouge. He happened to call me a couple of weeks ago and mentioned that he was in Baton Rouge, and I said, “Are you going to Trader Joe’s?” No, but he wanted to, so I employed a strategy I’ve used before: faith, hope, and Google Maps. He took a casual ride up Perkins road, saw lots of newly constructed housing and was amazed. It only took about 15 minutes or so, and he had to take another call. When I called back he was in the store and found the coffee samples. I may have created a monster.

Now, speaking of warmer weather, if you’re one of those people who has a taste for iced coffee, take heart. Nick Usborne at Coffee Detective has you covered. Nick just posted a tutorial on making iced coffee at home–and it couldn’t be simpler! I’ve been making it one cup at a time, and when I put almond milk in it, well, the milk curdles. No more. I first started drinking iced coffee when it was just hot in the Boeing building, and I poured my fresh coffee in a glass of ice and have loved it ever since. Check out Nick’s tutorial and start making your own. I did, using some decaf Community coffee last night.

I just used the big French Press. Twice. Made it a little stronger than I should have; but since this was the first time, I’ll be able to do better next time.

If you have the room, and I don’t, you can also make coffee as you normally would and make coffee ice cubes so your drink isn’t diluted. Maybe in the country house.

Anyway, into the pitcher it goes for whenever I want some.

If you go to a coffee shop, you will pay good money for iced coffee. Since Starbucks uses some kind of sugar-heavy mix, when I ask for a decaf iced coffee, they make it fresh for me. I don’t do that often, honest.

Now, I’ve written before about the wonders of the Crock Pot. Do you have one? Do you use it? Seriously, do you? Well, you should. If you don’t, go get one. But before you do, let me tell you what you can find. Well, let me tell you how I found out about all this.

I first started using one when I lived with the GER. When we weren’t getting along and I was planning to move, I stopped at Big Lots one day after a Buddhist meeting (I didn’t want to go home, basically) and found that they had white Crock Pots for $19.99 each. (This was 2004.) I bought a big round 6-quart and a smaller, oval 4-quart. I used both of them regularly, but slacked off a bit in recent years (I’ve been busy.)

One of the biggest draws is that the 110v Crock Pot doesn’t heat up the entire kitchen like your 220v stove will. Put food in it in the morning, and it’s ready to eat when you get home, no extra cooking, baking, or anything. So. . .with summer on its way, dust yours off, read the instruction manual and get started.

Continuing The Karma of Spare Parts, (oh, you have no idea) I haven’t used either of my Crock Pots in a while because a) the 6-quart needed a new knob to replace the melted and cracked one that didn’t work well, and the 4-quart oval needed a new lid after the old one lost the handle. I just got sick of waiting. Finally. . .I got on Crock Pot’s website and ordered them, darnit!

They arrived Easter Saturday, and I was SO happy. . .I had a piece of pork ribs I was going to drown in BBQ sauce, and I was going to make a breakfast, too, all on Easter Sunday. I figured the ribs would fit in the 4-quart one. Nope–change gears. Pulling the 6-quart out of the cabinet and transferring the meat, I moved the 4 quart to the other side of the kitchen. The plug caught in my apron somehow, I felt the pull when I moved, and before I could stop it, the next thing I heard was. . . .CRASH.

The 4-quart oval stoneware piece was in pieces, although the brand new lid and heating unit were fine. Oh, this was a big problem. I had to go out anyway, and one place I did go was Wal-Mart to, ah, “rent” another Crock Pot until I could get a new stoneware insert for the 4-quart. (Returned it a week later.) Meantime, I had a schedule and I had to get on with it. The day was saved, and the next day, I was cruising through a cookbook and found a chocolate custard recipe to make.

The next day I called Crock Pot and asked if they might have any white ones, but no, all they have now is black. That’s OK. I also needed to make sure I had the right one, and I did. The new stoneware arrived a few days later, and all was back to normal, more or less.

The Crock Pot started out as a bean cooker back in the 1970’s, and I’ve actually used it for garbanzo beans recently; that’s the subject of an upcoming post. But it didn’t take long for people to figure out that inexpensive cuts of meat cook up really nice and tender in it. Whole meals can be made in them, if you like (and if you have a small family.)

I clicked around Crock Pot’s official site, and I found a number of interesting things, including recipes, travel gear for Crock Pots, and something I wish I had when I was working–a Crock Pot for lunch! It’s small enough to tote around and carries just enough for lunch. You just plug it in at your desk and your lunch is nice and hot whenever you get to it. No waiting for a microwave that may not be sanitary, or leaving your lunch in the community fridge where someone might mistake it for theirs (or worse, mess with it.)  Awesome, and I wish I’d known about these a long time ago.

Now, the technology side comes out when I see the WeMo web-enabled Crock Pot. If you’ve never heard the term “The Internet of Things,” well, it means stuff that we use every day that is (or will be) *Internet-connected. While the smartphone is an obvious example, this is a definite contender. You download a free app for your smartphone, and you can turn the temp up or down, or turn the thing off by way of your phone. Great idea for people on the go, but it begs one question:

Do you really want your dinner hooked up to your WiFi?

Look, I’m kind of tech-savvy, especially after being in IT for 8 years. I’m so glad I have an iPhone (even if it is a 4.) The iPhone does, shall we say, butter many parsnips, and it’s a great help in a lot of ways. But connect your Crock Pot? Is that really necessary? One of the benefits of slow cooking is that if you’re a little late, it won’t burn. This, of course, is your choice, but even as a writer who does marketing, I just think it’s techie for the sake of being techie.

Up to you, of course.

There is also a blog, a spot for replacement parts, customer support (US based) and a page where you can order food just for your Crock Pot all ready to drop in. Call me whatever you like, but is it that difficult to cut up some stuff and throw it in? I’ve seen them once or twice in stores, but you can order them online. Up to you.

My first, and favorite book for slow cooking is The Everyday Low Carb Slow Cooker Cookbook, which I bought when it was new. (The GER wasn’t sure what to make of that, but that’s OK–I still confuse him to this day.)  Another one I have but only recently rediscovered is Dana Carpender’s 200 Low Carb Slow Cooker Recipes from 2005. That’s where the next recipe comes from. (I also have her book 15-Minute Low Carb Recipes, which I also need to go back and look at sometime.)

If you’ve never used a slow cooker before, or you need a refresher, let me tell you the basic rules:

  1. You put the food in
  2. You put the lid on
  3. You plug it in
  4. Turn it on
  5. Leave it alone

Got it? One other thing–make sure that when you put the lid on, it is covered and there are no “escape holes” for heat to leak out. You could come home to dry, tough food you weren’t expecting. I’ve done it, that’s why I say that.

When you go to clean the stoneware, make sure it’s cooled, or you use hot water to wash/soak it with–or you’ll be getting on the Crock Pot website and ordering a replacement.

Last night I went on Pinterest and typed in “Crock Pot Hacks.” I actually started another board to save them. One tip that I found was to line the crock with foil makes it easier to clean and helps everything cook evenly. However, I found a list of tips here that you might find interesting. One pin involved wrapping potatoes–sweet or russet–in foil and baking them in the slow cooker, but dry. Another one involved some wire and stuff, turning it into a sous-vide machine. I’m not posting it here because I do NOT want any of my readers getting shocked because it looked easy to do. (I’m thinking about you, GER, ’cause I know you’ll try it.)  But if you’re interested in finding new recipes, or other stuff you can do with a Crock Pot, check out Pinterest for more. Just start searching–you never know what you’ll find, and it’s not like Facebook at all.

Last night on Facebook I saw a short video titled “Shredding chicken like a boss!” It was a video of someone with a hand mixer shredding chicken that was obviously cooked in the Crock Pot–it was still hot. (Looked like chicken breasts, in a big Crock Pot.) The cook used the hand mixer on low speed, and the chicken was shredded in no time! It may be on YouTube as well.

Now–dessert time. How about some chocolate custard made in the Crock Pot? (That’s one of the recipes on the new page.)  It takes just a few ingredients and couldn’t be simpler.

First, heat up some almond milk and chocolate:

When it looks like that, whisk in your sweetener (I used 3/4 cup of SomerSweet, but the recipe calls for 2/3 cup Splenda, which you know I won’t use.)

The original recipe called for some kind of low-carb milk called Carb Countdown. I’ve never seen it, but the same amount of almond milk worked just fine. I don’t know if coconut, rice or other alternative milks will work, but if you want to try it, go for it. I just can’t guarantee anything.

Next, grease or spray a 6-cup glass casserole dish, and pour the cream in:

Then add the chocolate mixture, then the eggs individually:

Carefully put the casserole dish into the slow cooker, pour water around it, up to 1″ of the top rim. DO NOT get water into the custard, please.

Cover the slow cooker and cook it on low for 4 hours.

You take the lid off and let it cool. When it’s not burning hot anymore, carefully remove it from the crock, cover it, and when it’s cool enough to refrigerate, well, do so. Once it’s nice and cool, this is what you slice and serve:

NOW it’s ready to eat.

It’s rich, fudgy and substantial. Made in advance, it’s a nice option for a dinner party, or for a single woman to enjoy all week by herself. Hey–it’s my kitchen, I’ll enjoy a sugar-free, low-carb chocolate thing anytime I want.

Incidentally, the second time I made this, I topped a slice with some bought-on-sale raspberries and a light dusting of SomerSweet. Yum.

With summer pretty much here in the south, and coming everywhere else, a Crock Pot is going to be a good thing to have around. There are so many models available in various price ranges that it’s a good investment for cooks everywhere.

There are hundreds of books on slow cooking; I just listed two that I have. But with all the cooking websites available, it’s easy to find and keep recipes you like and either stash them in your DropBox, save them to your hard drive or print them and save them in a notebook. I found two e-books last night on Pinterest–one Paleo and one gluten-free that I’ll be reviewing soon.

College students in dorms also might want to think about Crock Pots, too–and learn to use it before they go to school in the fall. Might that be a good gift idea for a graduating senior? Just a thought.

And really–now that the long, cold winter is done, you want to get outside again, right? Let dinner cook itself. It’s easy to do, and couldn’t be simpler. Follow simple directions and you’ll have some tasty food waiting for you on your schedule. (You almost can’t burn it–that should make the “I can’t cook” crowd happy!)
